Tibouren, Cinsaut, and Mourvèdre are three old Provençal varieties, particularly well suited to our changèd climatic situation, collaborating in this instance in the New World to produce a wine of great refinement and unique fragrance — the Tibouren and Cinsaut are responsible for the haunting cherry and almond blossom scent; the Mourvèdre adds structure and a quality of earthiness. What is particularly seductive about the wine is its texture: raised on its lees until just prior to bottling, the wine underwent complete malolactic fermentation and was bottled without filtration, imparting a rich, creamy mouthfeel and considerable persistence. We believe the pink wine to be capable of considerable evolution and will repay several years of cellaring.Winemaker Notes
Unlike the previous vintage, we were indeed able to achieve a few hours of maceration pelliculaire (aka “skin-contact” for the anglophonic) with the Tibouren fruit, but for reasons with which I need not bore you, we were compelled to whole-cluster press the Cinsaut grapes. Neither Tibouren nor Cinsaut are particularly deeply pigmented to begin, so we have, (voilà) a very pale pink wine here. Extended lees contact kept the wine fresh as it reposed in older cooperage (and cement egg) and careful racking off the lees enabled us to bottle the wine without filtration, redounding to enhanced depth of texture. Vive le Tibouren (et Cinsaut)! (Also, note for the record that unfiltered wine takes a little while to open up aromatically, so be patient, give the wine some time in the glass or even consider decanting!)Wine Profile
